A modernised version of the traditional Battenburg cake. Yellow and Pink sponges lightly flavoured with Raspberry and Passion fruit, arranged in a chequerboard style. Filled with a lightly almond flavoured mascarpone cream cheese icing and topped and bottomed with a thin layer of marzipan. Finished with fresh raspberries, cake cubes and dehydrated passion fruit flakes.
